“This recipe does justice to fresh garden tomatoes!”

3 tomatoes, cut into medium sized wedges
1/4 to 1/2 red onion minced
1/4 C chopped fresh parsley
6 Tbsp. olive or vegetable oil
3 Tbsp. white wine or apple vinegar
3/4 tsp salt
1 garlic clove, minced
1/2 C freshly grated parmesan cheese.

Place all ingredients, except the oil and vinegar in a bowl. Mix. Pour the oil and vinegar over the mixture, lightly toss and marinate for at least 4 hours. Enjoy!
